Welcome to Provata Wood Fired Pizza and Fresh Pasta, a brand new franchise concept. Founded and operated by two generations of the Rinaldi family, Provata is a full service, casual, Italian wood fired pizza and fresh pasta concept. The restaurant features rock solid menu items that can be replicated with the company’s proven training program.

The Rinaldis put their over 37-year history as restauranteurs to work to create the Provata concept. They drew on their experience with their wildly successful LaTela Pizzeria on Kiawah Island, SC to fine-tune the menu, service and systems. The Provata menu starts with the best wood fired handmade Neapolitan-style pizza, featuring a thin-style crust and fresh mozzarella cheese.

Customers can choose from a number of top quality, fresh toppings, including prosciutto, pancetta, pepperoni, meatballs, house-made sausage, ricotta, mozzarella, goat cheese, eggplant, roasted red peppers, roasted mushrooms, caramelized onions, arugula, sweet red onion, fresh tomato and gorgonzola.

Customers can also opt for specialty pizzas, a variety of made-on-premises pastas and sauces, main dishes such as lasagna, manicotti, chicken or eggplant parm and chicken Milanese, delicious salads with house made dressings, grinders, desserts, and a small, but well-chosen selection of wines and craft beers. Many menu items can be prepared gluten free or vegan.

While this menu seems extensive, upon review, it is also very efficient. Most of the prepped items are used in various different dishes.

Provata offers dine-in, to-go and pick-up catering options. For dine-in guests, a typical Provata restaurant has seating for 90 to 100 patrons. A patio is nice but not a requirement. The restaurant also has a bar to accommodate single diners and those who want to relax over a glass of wine or beer waiting for to-go orders or for a table. Take-out sales are a critical portion of the business.

The Rinaldi’s restaurants have always been places where customers feel comfortable to relax and enjoy wonderful meals. They build a super strong local following. With Provata, you will learn how to develop this same solid relationship with your customers, based on the true meaning of Italian hospitality.

The Provata concept engages the guests’ senses, not just taste. The smells of the restaurant are an important part of the appeal – the wood burning in the oven, the smell of bread or dough baking, the aroma of garlic – all attract people and draw them in. With the open kitchen, people can see the bread being baked and pasta being made. They can watch the homemade pizza coming out of the oven. They feel the energy. The open kitchen really adds to the ambience. The flavor of the food is an important element in the overall experience as well.
